This is a white bean minestrone recipe adapted from Mark Bittman’s book How to Cook Everything – it’s tasty, and fully of veggies and very filling. I make it on Sunday and take it to work for lunch all week. If you’re tracking, it’s 250-ish calories per two cup serving. I love soup.
